This coffee is a great example of how dynamic Ethiopian coffee can be. Intensely floral, super juicy, and incredibly refreshing.
During this process , coffee is laid onto the patio in thin layers (5cm) for a few days(6 days in this type) before commencing the fermentation process in the anaerobic medium (like plastic bags ).
The average temperature of the patio is 32° Celsius, and this temperature helps decrease moisture levels significantly, preventing the availability of water to facilitate bacteriological reactions while providing enough moisture to support enzymatic reactions within the coffee bean's structure.
