Its experimental process combines carbonic maceration, Mossto fermentation with fresh raspberry and cherry, and double anaerobic fermentation to develop fruit-forward character, sweetness, and complexity. Best suited to filter brewing and V60. Allow around two weeks of rest after roasting and check the roast date on the bag.
